Mix the dry ingredients thoroughly in a large bowl
Add the olive oil and water and mix until the dough is assembled
Scrape the dough onto a lightly floured surface and knead for 5-10 minutes
Divide dough into four equal pieces
Using a rolling pin, flatten each piece of dough into a circle about 3mm thick
Place each pita on a lightly floured baking tray (you will probably be able to fit two pita on each tray)
Cover each tray gently with a damp dishtowel
Preheat oven to 500F / 260C while letting pita rise in a warm spot for 30 min
